Baked potato wedges

I love french fries, but they are so naughty!  I got some small red skinned potatoes and I love to cut them up and bake them. 

Pre heat your oven to 375.

Cut your potatoes into wedges, depending on their size you may only need to cut them in half.  Mine were pretty big so I cut each one into several wedges.

Put your wedges in a bowl and spray the potatoes with non fat cooking spray (I used Crisco spray this time).  Then generously sprinkle salt and some pepper and toss it all together.

Dump it all onto a cooking sheet.  I lined mine with foil for easy cleanup.


Bake at 375 for 15-20 minutes.  They should get a little golden brown when they are ready to come out.  Just poke it with a toothpick to see if it's done.  

I ate mine with a glass of frosty green iced tea!

Another flavor is tossing the wedges with olive oil, and lightly sprinkle with rosemary and thyme.  Then salt to taste.  I did this last time so I switched to salt and pepper. :)
